Cheese - Prima Donna
DESCRIPTION
This hard, crumbly cheese was originally inspired by modifying a recipe for Parmesan Reggiano. With a hard, nutty flavor and nutty flavor, Prima Donna has both a more youthful texture (higher moisture content) but salt crystals spread throughout the wheel (the result of aging). The result is a nutty flavor and crunchy texture that normally occurs in older, more expensive goudas.

STORAGE TIPS
Refrigerate preferably in its own drawer close to where most of the produce is kept. After each time that you slice the cheese, re-wrap it with fresh plastic wrap to extend the shelf life. While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.
